Roll out the pastry on a lightly floured work surface. Use a saucer to cut out 6 circles (or use a coffee cup saucer to make 12 smaller circles). If needed, you may re-roll the dough so that you can cut out more circles.

Place a spoonful of cheese mixture (Step 2) in the center of each pastry.

Brush the semicircle edges of the pastry with a little water, then fold the edges of the circle into a half circle. Press down for a good seal, then place the pie on the baking sheet. Fold the edges between the fingertips
